As to the main body of your post. Good. You got the hang of the NPC's, but you need to think of it kind of like the same scene but from two points of view.
For example, you'd write your characters point of view. But you play your NPC as a completely different character who is interacting with your primary character.
You only need to introduce your NPC once so we know you're writing as them, and then play out the scene from their point view. You might repeat the same lines back and fourth between each character. But it's from the perspective of a completely different character. Their thoughts and dreams. Ensign Fog may like Vulcans.
